How to Read Nutrition Labels: Milligrams, Grams, and What They Mean

A nutrition facts panel is a small table doing a lot of work, and one of the first things people notice is that it does not stick to a single unit. Total fat is in grams. Sodium is in milligrams. Vitamin D is in micrograms. That inconsistency looks arbitrary, but there is a straightforward reason for it.
Why the units change partway down the panel
Each nutrient is listed in whichever unit keeps its typical amount readable. Macronutrients appear in quantities of several grams to several tens of grams, so grams work. Sodium and cholesterol appear in quantities of hundreds of milligrams — under a gram — so milligrams work better.

Written in grams, a sodium figure of 480 mg would appear as 0.48 g — a number that looks negligible next to 12 g of sugar in the row above, even though sodium intake is tracked far more tightly. Keeping it in milligrams preserves a sense of scale.

Comparing two products fairly
Two things have to match before a comparison means anything, and unit conversion is only the first of them.

- 2Check the serving sizes match. This is where most comparisons quietly fail. A label showing lower numbers per serving may simply be describing a smaller serving.
- 3Where available, compare per 100 g. Many regions require a per-100 g column precisely because it makes products directly comparable regardless of serving size.
The serving-size trap
If one cereal lists 30 g servings and another lists 45 g, the second will show higher numbers throughout even if it is identical food. Normalise to the same weight before drawing any conclusion.
What the percentage column adds
Alongside the weights, most panels carry a percentage of a daily reference value. That column is doing the conversion work for you in a different way — it expresses the amount as a share of a benchmark, so you do not have to remember what 480 mg of sodium means in context.
It has a limitation worth knowing: the reference figures are based on a standard adult intake, not on any individual. Useful as a rough guide, less useful as a personal target.
Micrograms on the vitamin rows
Further down most panels the units shift again, to micrograms. Vitamin D, folate and B12 are needed in quantities so small that even milligrams would require decimals — a typical vitamin D figure of 25 mcg is 0.025 mg, or 0.000025 g.
